noodles
280g water
10g kosher salt
5g baked baking soda
500g bread flour
1/2 teaspoon shmaltz
stock
1 tablespoon shmaltz
4 pounds chicken wings
1 cup cooking wine
cold water
1 onion
1 carrot
1 leek
1 celery stock
1 garlic
some dried shittake mushrooms
bouquet garni
some black peppercorn
some turmeric

1/4 cup soy sauce

6:08 Maybe the 30% hydration is of the combined dough. I mean if the final weight of the dough is 1 kg the amount of water should be 300ml. But if you start at 1kg of flour the amount of water should be 428.5 ml. I don't know anything about baking nor how exactly Claire was measuring everything but it could be a reason it was so dry.
